Mushroom and arugula omelet

Ingredients for 1 servings:

  • 2 eggs
  • 2 tbsp milk
  • 5 mushrooms
  • 1 handful of arugula or spinach
  • some oil
  • salt and pepper
  • chili powder
  • 75 g feta cheese
  • n. B. Balsamic cream

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Clean the mushrooms and chop them finely. Fry them in a pan with a little oil. Whisk together the eggs, milk, and seasonings. Add the arugula to the pan and stir briefly. Add the egg mixture and continue frying until the egg has set into an omelet. Sprinkle the omelet with feta cheese and serve with some fresh arugula and balsamic vinegar, if desired.
