Ingredients for 4 servings:
- 230 g flour
- 150 g butter
- ½ tsp salt
- 4 tbsp water
- 1 egg(s)
- 1 goat cheese roll
- 4 figs, fresh
- 3 eggs
- 200 ml cream
- 25 g Parmesan, freshly grated
- 1 handful of walnuts
- 1 rosemary sprig(s), chopped needles
- Honey, optional

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes
without meat
Knead together a dough of flour, butter, 1 egg, water, and salt and refrigerate for 30 minutes. Transfer the dough to a quiche dish and prick it several times with a fork. Spread the sliced goat cheese over the dough. Mix the cream, eggs, and Parmesan cheese and spread it on top of the goat cheese in the dish. Place the sliced figs on top. Finally, lightly crush the walnuts with your fingers and sprinkle with the rosemary. If you like, you can quickly drizzle with honey. The bitter goat cheese, sweet figs, and honey go perfectly together. Bake at 180°C for about 35-45 minutes. The quiche can be served immediately after baking.
