Ingredients for 3 servings:

  • 1 kg goose breast, with bone
  • ½ orange(s), peeled
  • ½ onion(s), cut into half rings
  • 1 tbsp honey
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 15 minutes

Wash the goose breast and pat dry. Rub with salt and pepper to taste (this is more than enough). Place skin-side down in a roasting tin or ovenproof casserole dish with a little water (1-2 cm water level) and place it on the middle rack of a hot oven at 170°C (top/bottom heat). After 1/2 hour, turn the goose breast. Roast for 1 hour, basting the breast with the meat juices 2-3 times every 15 minutes. Add 2 peeled orange slices and the onion half rings halfway through cooking. Roast for another 1/2 hour, brushing the skin with honey 10 minutes before the end.
