Season the leg(s) and let them rest for a while. Preheat the oven to 130°C (265°F). Place the leg(s) in a suitable dish, ensuring they fit snugly together. Place in the oven. After 15 minutes, reduce the temperature to 75°C (165°F). Use a thermometer. Fan-assisted cooking is easier. After about 8-10 hours, they’re ready to take out. You can also grill them directly after removing them from the dish (roasting pan). Use the resulting juices to make a sauce or cook delicious kale.
