Gooseberry Cake with Bee Quilt
The perfect gooseberry cake with bee quilt recipe with a picture and simple step-by-step instructions.
The batter
- 125 g Butter or margarine
- 175 g Sugar
- 1 packet Vanilla sugar
- 3 Eggs
- 150 g Flour
- 3 tbsp Sweet cream
- 0,5 packet Baking powder
- 1 big glass Gooseberries or other fruit
The topping
- 200 g Flaked almonds
- 100 g Sugar
- 70 g Butter
- 3 tbsp Milk or cream
- Drain the gooseberries well in a sieve. Preheat the oven to 180 degrees.
- Beat the butter, sugar and vanilla sugar until frothy and stir in the eggs one after the other. Mix the flour and baking powder and fold in alternately with the cream. Pour the dough into a greased springform pan. Spread the gooseberries on top. Bake for 15 minutes. Then turn the oven up to 200 °.
- In the meantime, melt the butter for the topping. Add sugar, almonds and milk and stir. Spread over the pre-baked cake with a spoon. Bake for another 15-20 minutes, depending on how brown you want it to be.
- Take out of the oven, place on a wire rack and immediately run the knife along the edge and loosen the springform pan. If you do it later, the sugar on the edge has become too hard.
- A real treat with freshly whipped cream.
