Ingredients for 1 servings:

  • 180 g gooseberries, ripe
  • 2 m.-sized eggs
  • 160 g cane sugar
  • 180 g flour
  • 140 g butter, soft
  • 2 ½ tsp, leveled baking powder
  • 250 g crème fraîche
  • 2 packets of vanilla sugar
  • 70 g oat flakes, fine
  • 1 pinch of salt
  • Butter for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

In a bowl, mix the flour with the oats and baking powder. Trim and wash the gooseberries. Crack the eggs into a bowl and lightly beat them. Add the brown sugar, salt, butter, and vanilla sugar and mix well. Add the crème fraîche, then fold in the flour. Mix the dried gooseberries into the batter. Pour the batter into the buttered muffin tin. Bake in a preheated oven at 170°C for approximately 20-25 minutes.
