Cranberry muffins

Ingredients for 1 servings:

  • 200 g flour
  • 50 g cornstarch
  • 3 tsp baking powder
  • 170 g cane sugar
  • 150 g butter, melted
  • 2 eggs
  • 1 packet of vanilla sugar
  • 200 g sour cream (24% fat)
  • 200 g cranberries, fresh or frozen
  • 100 g powdered sugar
  • 20 ml juice (cranberry juice)
  • 1 pinch of salt
  • 30 g chocolate (chocolate drops/chips)
  • Grease for the tray

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat oven to 175°C. Grease a muffin tin. Place flour and cornstarch in a bowl and mix with baking powder. Crack the eggs into another bowl and lightly beat. Add the sugar, salt, butter, and vanilla sugar and mix well. Add the sour cream. Stir in the flour. Finally, fold in the cranberries and chocolate chips. Pour the batter into the tin. Bake in the preheated oven on the middle rack for approx. 20-25 minutes until golden brown. Mix the powdered sugar with a little cranberry juice until smooth and coat the muffins with it.
