Ingredients for 1 servings:
- 2 kg gooseberries, ripe (green or red)
- 2 kg syrup sugar for berries
- 600 ml water
Instructions
Working time approx. 45 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 4 hours 15 minutes

Wash the fruit thoroughly, bring it to a boil with water in a pot, and then strain it through a damp cloth. Do not press it to retain only the clear juice. Then reduce it to a syrup with the syrup sugar and skim off the foam. Bottle while still very hot, or sterilize at 70°C for about 25 minutes.
