Gorgonzola cream with arugula and apple

Ingredients for 8 servings:

  • 60 g Gorgonzola
  • 1 small sweet and sour apple (approx. 100 g)
  • 1 bunch arugula
  • 30 g pine nuts
  • 2 tbsp mascarpone (approx. 70 g)
  • 2 tbsp apple cider vinegar (approx. 25 g)
  • some sea salt, freshly ground
  • some cayenne pepper

Remove the rind from the Gorgonzola and roughly dice the cheese. Peel and halve the apple, remove the stem and core, and roughly dice. Trim, wash, and shake dry the arugula. Combine all ingredients in an electric chopper or blender (a hand blender or immersion blender also works; but be careful: it will splash a bit) and puree until smooth. Pour the cream into a bowl and season generously with salt and cayenne pepper. Use as quickly as possible. It will keep in the refrigerator for a few days. For those interested, the nutritional values ​​per 100g are: 228 kcal / 6.4 g protein / 5.4 g carbohydrates / 20.3 g fat.
