Gorgonzola spaghetti with radicchio

Ingredients for 4 servings:

  • 400g spaghetti
  • Salt for cooking water
  • 1 small onion(s)
  • 1 tbsp extra virgin olive oil
  • 200g Gorgonzola
  • 1 tsp vegetable stock powder
  • 50 ml water
  • 1 pinch(s) black pepper, from the mill
  • 1 small radicchio

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Bring plenty of water to a boil, add salt, and cook the spaghetti until al dente. In the meantime, peel and finely dice a small onion. Sauté it in a little olive oil, add water, and stir in the vegetable stock powder. Cut the Gorgonzola into pieces and dissolve it in the stock. Season the sauce with a little pepper. Finely slice the radicchio. Drain the pasta and toss it with the Gorgonzola sauce. Arrange the pasta on warmed plates and sprinkle with the radicchio strips.
