Goulash with braised vegetables

Ingredients for 4 servings:

  • 350 g beef for braising
  • 350 g pork from the nut
  • 500 g tomatoes
  • 1 large cucumber(s)
  • 1 bell pepper(s), red or yellow
  • 150 ml vegetable stock
  • 1 tbsp tomato paste
  • salt and pepper
  • possibly sauce thickener

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 35 minutes

Peel the large cucumber and cut into fairly small pieces. Also clean and chop the peppers and tomatoes. Cut the meat into goulash-sized pieces and sear them all over in a casserole dish, seasoning with salt and pepper. Add the tomato paste and deglaze with the vegetable stock. Add all the vegetables to the casserole dish. Mix well and simmer in a covered pan over medium heat for 1 hour and 15 minutes, stirring occasionally. Tip: If you prefer a thicker sauce, you can thicken it a little at the end. We serve it with mashed potatoes.
