Ingredients for 3 servings:
- 2 packs of tortellini of your choice
- 1 large onion(s)
- 1 bell pepper(s), red
- 1 tsp parsley
- 1 tsp basil, dried
- ½ tsp oregano, dried
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar, dark
- 1 tbsp oil for frying
Instructions

Cook the tortellini in lightly salted water according to the package instructions and drain. Peel the onion and dice it into small cubes. Wash, trim, and dice the bell pepper. Fry the diced onion in a pan with 1 tablespoon of oil until translucent. Then add the diced bell pepper. Lightly brown both over medium heat. Then add the balsamic vinegar and olive oil and bring to a boil briefly. Place the tortellini in a large bowl and drizzle with the onion and bell pepper vinaigrette. Mix everything well and let it sit for a few hours. This salad goes well with grilled or roasted meat, but it also tastes delicious on its own.
