Ingredients for 4 servings:
- 1 kg fish fillet(s) (wolffish fillet or firm white fish fillet)
- 1 can tomatoes, chopped
- 1 bunch of parsley
- 1 garlic clove(s)
- 2 lemons
- 2 carrots
- 1 tsp sugar
- 5 tbsp olive oil
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 15 minutes
Preheat oven to 180°C. Cut the fish fillets into approximately 8-10 cm pieces and place them side by side in a large, greased baking dish. Chop the parsley, garlic, and celery. Mix with the tomatoes, lemon juice, olive oil, and sugar, season with salt and pepper, and pour over the fish pieces. The fish should be completely covered. Cover with aluminum foil and bake in the oven for about 20 minutes. Then increase the temperature to 200°C, remove the foil, and bake for another 30-35 minutes, until the sauce has thickened slightly. Serve immediately. A fresh salad, potatoes, rice, or millet are ideal accompaniments. A fresh baguette is an absolute must, however, for dipping into this fantastic sauce!
