Grabbed red cabbage

Ingredients for 4 servings:

  • 1 head of red cabbage
  • 2 m.-large apples, sour, e.g. Boskop
  • 4 cl vinegar (raspberry vinegar)
  • 4 cl oil (apricot kernel oil)
  • 1 pinch of salt
  • 2 pinches of pepper
  • 2 pinches of sugar

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Raw food Grandma’s way

Trim the red cabbage, remove the outer leaves, and remove the stem. Peel the apples, core them, and cut them into eighths. Coarsely grate both and combine with the remaining ingredients in a suitably large bowl. The key now is to “grab” the cabbage. Knead well, repeatedly (about 5 minutes). Then, cover and let it rest for at least 3 hours. Stir well again before serving. The raw cabbage should taste sweet and sour; season with more vinegar or sugar if necessary.
