Ingredients for 1 servings:
- 140 g sunflower seeds
- 90 g flaxseed
- 150 g whole grain oat flakes
- 60 g chia seeds
- 40 g psyllium husks
- 2 tsp salt
- 30 g sunflower oil
- 75 g hazelnuts or walnuts or other nuts
- 350 ml water, lukewarm
- 1 tbsp honey or maple syrup
Instructions
Working time approx. 10 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 5 hours 20 minutes

First, combine all the dry ingredients, then add the honey and water, and mix everything thoroughly using the dough hook on a mixer. Pour into a loaf pan lined with baking paper and let it rise for about 1 hour. Bake in a preheated oven at 180°C (top/bottom heat) for 20 minutes. Then remove the bread from the pan, place it on the oven rack, and bake for another 50 minutes. Caution: The bread will not rise! Let it cool completely before slicing, otherwise it will crumble. I freeze the bread in slices and toast it before eating, which makes it nice and crispy. It goes great with soups and stews.
