Grain salad with goat cheese

Ingredients for 1 servings:

  • 100 g spelt or wheat, cooked
  • 50 g cheese (goat cheese), pickled
  • 1 small bell pepper(s)
  • 1 small onion(s)
  • 1 small apple
  • 1 tomato(s)
  • 1 tsp mayonnaise
  • 4 tsp yogurt
  • Paprika powder, hot
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dice the goat cheese, bell pepper, onion, apple, and tomato. Add the spelt. Mix a marinade of mayonnaise, yogurt, bell pepper, salt, and pepper and pour it over the salad. You can add Provençal herbs or parsley to taste. Tip: I keep the cooked spelt in the freezer – soak a package of spelt in water overnight. The next day, bring it to a boil with broth and let it swell on the stovetop. Once the grain has cooled, you can freeze it in portions.
