Grain triangles with quark

Ingredients for 6 servings:

  • 200 ml water
  • 20 g fresh yeast
  • 1 tsp honey
  • 20 g butter
  • 100 g quark
  • 250 g spelt flour
  • 200 g whole wheat flour
  • 1 tbsp salt
  • Grains of your choice

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 20 minutes

Dissolve the yeast and honey in the lukewarm water. Mix the flours in a bowl and make a well in the middle. Pour the yeast water into this hole, dust with a little of the flour, and let rest for about 15 minutes. Add the butter, curd cheese, and salt and knead for 10 minutes by hand or 5 minutes with a kneading machine. Cover the dough and let rise for 1 hour. Then knead the dough well again, fold it a few times, roll it out into a round shape, and divide it into six or eight triangles using a dough scraper. Spray the triangles with water and then roll them in the seeds. Cover and let rise for 20 minutes. Preheat the oven to 230°C (top/bottom heat). Steam the rolls when placing them in the oven, i.e. pour a cup of water into the oven. After 10 minutes, open the oven door fully to let the steam out. Reduce the temperature to 200°C (400°F) and bake for about 10-15 minutes. Allow to cool on a wire rack.
