Grandma Blaney's Gingerbread

Ingredients for 1 servings:

  • 50 g butter
  • 1 cup syrup (molasses), dark
  • 1 cup sugar, soft brown
  • 1 cup flour, heaped
  • ½ tsp baking powder and a pinch of salt
  • 1 ½ tsp ground ginger
  • 1 egg(s)
  • 1 cup milk, lukewarm
  • ½ cup raisins
  • 2 tbsp candied ginger, finely chopped
  • powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Gingerbread

In a small saucepan, melt the butter, molasses, and sugar over low heat. Allow to cool slightly. Sift in the flour, add the ground ginger, baking powder, and salt, and mix well. Lightly beat the egg. Add the cooled butter mixture, milk, and egg to the dry ingredients and mix well. Finally, add the raisins and chopped ginger. Bake in a prepared 25cm loaf tin at medium heat for about 45 minutes. Do the pin test; baking time may vary depending on the oven. Once cooled, sprinkle with icing sugar. Serve brushed with butter with tea. NB: The cup is a normal 250ml teacup.
