Grandma Ella's tuna rice salad

Ingredients for 4 servings:

  • 1 can tuna in oil
  • 1 tsp onion(s), finely chopped
  • 1 small red bell pepper(s), finely diced
  • salt and pepper
  • lemon juice
  • 4 tbsp mayonnaise
  • 4 tbsp yogurt
  • 1 cup rice
  • 1 cup apple, diced

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Cook the rice in salted water as needed. Meanwhile, drain the tuna and shred it into thin strips. Mix with the diced onion and bell pepper. Season with salt, pepper, and lemon juice. Mix the mayonnaise and yogurt. Stir half into the tuna mixture. Chill. Then, mix the lukewarm rice with the diced apple and the rest of the mayonnaise/yogurt mixture. Arrange the rice on a platter. Place the tuna on top and form it into a mound. Decorate as desired.
