Grandma Frieda's Quark Casserole

Ingredients for 3 servings:

  • 500 g quark
  • 3 eggs
  • 125 g sugar
  • 1 lemon(s), grated peel, or lemon peel flavoring
  • 60 g semolina
  • ½ pack of baking powder
  • e.g. breadcrumbs, for sprinkling
  • some butter flakes
  • e.g. fat, for the casserole dish

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Separate the eggs. Beat the egg whites until stiff. Mix the egg yolks with the quark, sugar, and lemon zest. Mix the baking powder with the semolina and stir in. Fold in the beaten egg whites. Pour the batter into a greased baking dish, sprinkle with breadcrumbs, and top with butter flakes. Bake in a preheated oven at 175°C (350°F) for about 30 minutes, until the casserole is golden brown. Caution: The batter will rise during baking! Please choose the appropriate size casserole dish. We always make 1.5 times the batch for two adults and three children as a sweet lunch with raspberry dessert sauce or jam. The casserole can be made entirely from organic ingredients.
