Grandma Rosi's potato salad

Ingredients for 6 servings:

  • 1 kg potato(s), waxy
  • 500 g sausage, poultry sausage (ring)
  • 500 g Miracle Whip Balance
  • 200 g sour cream
  • 1 tbsp parsley, frozen
  • 150 ml vegetable stock, instant
  • salt and pepper
  • Marjoram (dried)
  • 6 eggs

Working time approx. 20 minutes; Total time approx. 20 minutes

Mother-in-law’s recipe

Boil the eggs hard (approx. 10-12 minutes), then rinse in a cool place, peel, and slice into strips using an egg slicer. Boil the potatoes, then peel and slice them into strips and place them in a salad bowl. Season with salt and pepper and marjoram. Dice the sausage and add it to the potatoes. Add the egg strips as well. Sprinkle the frozen parsley over all the ingredients. Mix the Miracle Wip and Sour Cream and carefully fold in. Gradually add a little vegetable stock until the salad is easy to stir. Let it sit in the refrigerator for one hour. Season again with salt and pepper and add a little stock before serving. This goes well with grilled meat, meatballs or frankfurters and cucumber salad with a vinegar, oil, and sugar dressing.
