Grandma's Blueberry Muffins

Ingredients for 18 servings:

  • 100 g butter or margarine
  • 3 eggs
  • 200 g sugar
  • 200 ml milk
  • 330 g flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 orange(s), untreated, grated peel
  • 250 g blueberries, fresh or frozen
  • some sugar, for sprinkling

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Melt butter or margarine over low heat. Crack the eggs into a bowl and beat with a fork. Add the sugar, melted but cooled fat, and milk and mix thoroughly. Preheat the oven to 200°C. Put the flour, baking powder, and salt into a second bowl and mix well. Add the dry flour mixture to the wet ingredients and mix until just moistened. Finally, fold in the orange zest and berries. Place 18 paper cases in a muffin tin and fill each one about three-quarters full with the batter. Sprinkle a little sugar on the top. Bake in the preheated oven (180°C fan, gas mark 3-4) for 25-30 minutes, until the tops of the muffins crack. Remove the tray from the oven and let the muffins rest for about 5 minutes. Let cool on a wire rack.
