Ingredients for 1 servings:

  • 300 g flour
  • 2 tsp baking powder
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 50 g butter or margarine, soft
  • ½ bottle of rum flavoring
  • 2 eggs
  • 100 g plum jam or jam
  • 1 packet of sugar (vanilla-flavored decorative sugar)
  • Flour for the work surface

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

Sift the flour and baking powder into a mixing bowl. Add the remaining ingredients and mix everything with a hand mixer, first on the lowest speed and then on the highest speed, until you have a dough. Wrap the dough in cling film and chill for about 30 minutes. Roll out the dough on a lightly floured surface to a thickness of about 3 mm and use a pastry wheel to cut into rectangles measuring approximately 4.5 x 3.5 cm. Place half of the rectangles on a baking tray lined with baking paper. Using two teaspoons, place a hazelnut-sized dollop of jam or plum compote on each rectangle. Place the remaining rectangles on top and press down the edges. Bake at 180°C for about 10 minutes. Immediately dust the pastry with decorative sugar and then leave to cool on a wire rack.
