Ingredients for 4 servings:

  • 1 bunch of soup vegetables (leeks, carrots, celery)
  • 1 onion(s)
  • 2 Cabanossi
  • some fat
  • 350 ml chicken broth or vegetable broth
  • 100 g lentils
  • salt and pepper
  • 3 tbsp vinegar (wine vinegar)
  • ½ bunch parsley

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Lentil stew

Clean the soup vegetables and cut into small cubes. Cut the Cabanossi into slices about 1/2 cm thick and fry in a large pot (with a little fat). Remove the slices from the pot and set aside. Now fry the onions in the same pot. After about 3 minutes, add the soup vegetables and sauté. Then deglaze with the stock. Stir in the lentils and bring to a boil. Then reduce the heat and simmer for about 30 to 60 minutes (depending on the variety). Add a little more water or stock if necessary. Return the sausages to the pot. Season with salt, pepper, and vinegar. Finally, sprinkle with chopped parsley. Tip: If you soak the lentils in water for a few hours (or overnight) beforehand, they will be cooked in about 30 minutes.
