Ingredients for 1 servings:

  • 180 g coconut oil
  • 3 eggs
  • 180 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 250 g potato flour
  • 1 shot of rum

Instructions

Melt the coconut oil and let it cool. It must be coconut oil; butter won’t work. Then mix well with the eggs, vanilla sugar, and sugar. Stir in a small dash of rum (about 1 teaspoon). Finally, stir in the potato flour. Let the batter rest for about 15 minutes. Bake in a waffle iron and, after letting it cool slightly, pack it in a tin. They’ll keep fresh for weeks. The batter makes about 6 waffles.
