Grandmother’s Way of Lobster Tails
The perfect grandmother’s way of lobster tails recipe with a picture and simple step-by-step instructions.
For the sauce:
- 1 l Water
- 1 dl Noilly Prat
- 1 Pc. Onion
- Mixed herbs
- Peppercorns
- 500 g Carcasses of lobster
- 1 Pc. Leek
- 1 Pc. Onion
- Tomato paste
- 3 Pc. Garlic cloves
- 80 g Flour
- 1 l Fish stock
- 40 cl White wine
- 10 cl Pineau des Charentes
- Pimento
- Mixed herbs
- Olive oil
- Salt and pepper
- 100 ml Cream
- Heat the water, Noilly Prat, onions, herbs and pepper and let the lobster tails soak in it for about 7 minutes (depending on weight).
- Fry the carcasses for 5 minutes over high heat in olive oil and then dust with flour. Now add the remaining ingredients. Then let everything stand for a good half an hour over medium heat, stirring occasionally. After half an hour, put everything through a sieve and finally round off the sauce with cream.
