Ingredients for 4 servings:

  • 1 large onion(s)
  • 2 tbsp oil
  • 750 g potatoes
  • 500 g beetroot, cooked, preferably vacuum packed
  • 4 gherkins
  • 400 g beef in its own juice
  • 2 tsp, heaped vegetable stock powder or beef stock powder
  • nutmeg
  • 125 ml beetroot juice
  • pepper
  • Cucumber juice
  • Salt

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Peel the potatoes, chop them into small pieces, and boil them until tender. Meanwhile, finely chop the onion and fry it in oil until lightly browned. Grate the beetroot and gherkins with a grater. Finely mash the beef with a fork. Drain the potato water and mash the potatoes in a pot. Add the onions, beetroot, gherkins, meat, stock powder, and nutmeg; mix well until smooth. Add enough beetroot juice to give the Labskaus a beautiful wine-red color. Heat everything while stirring, season generously with pepper, and season with gherkin liquid and salt. Serve with fried eggs and herring or pickled herring.
