Ingredients for 2 servings:
- 1 pack of potato dumpling dough (half and half)
- 100 g minced beef
- 1 tbsp breadcrumbs
- 1 tsp mustard, medium hot
- 2 small onions
- 25 g gherkins (cornichons)
- 50 g lean bacon
- 1 garlic clove(s)
- 2 tbsp oil
- 1 small can of tomatoes, peeled
- Paprika powder, sweet
- Cayenne pepper
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Mix the dumpling dough according to the package instructions and let it swell. Mix the minced meat with breadcrumbs, mustard, 1 finely diced onion, and finely diced gherkins, and season with salt and pepper. Shape the dumpling dough into 8 dumplings, filling each with a little minced meat. Bring plenty of salted water to a boil, then simmer gently for about 25 minutes. Peel and dice the second onion and garlic, then fry in 1 tablespoon of oil. Chop the tomatoes, add them with their juice, and simmer for 10 minutes. Season the sauce with salt, pepper, paprika, and cayenne pepper. Dice the bacon and fry in 1 tablespoon of oil until crispy. Remove the dumplings from the water with a slotted spoon and place them in a bowl, sprinkle with the bacon, and serve with the tomato sauce. A leaf salad such as endive or radicchio goes well with the dish.
