Gratinated fish fillet with lemon and basil topping

Ingredients for 3 servings:

  • 500 g fish fillet(s), thicker, e.g. cod
  • 1 small lemon(s), untreated
  • 1 garlic clove(s)
  • 1 anchovy
  • 25 ml olive oil
  • 1 bunch of basil
  • 30 g almonds
  • 60 g olives, green
  • Honey
  • Parmesan, freshly grated
  • Salt
  • pepper, black
  • Oil, for the casserole dish

Clean the fish and place it in a lightly greased baking dish. Grate the lemon zest and squeeze the juice. Blend both with olives, basil, garlic, almonds, anchovy, and olive oil. Season the mixture with salt, pepper, and honey, then spread it evenly over the fish fillets. Spread the freshly grated Parmesan cheese evenly over the fish. Place the baking dish in a preheated oven (180°C) for about 15-20 minutes (depending on the thickness of the fish fillet). Then turn on the broiler and bake for a few minutes until the crust is golden yellow. If you have any leftover lemon and basil mixture, it makes a great pasta pesto!
