Port wine vinaigrette

Ingredients for 1 servings:

  • 2 tbsp powdered sugar
  • 2 dl port wine
  • 1 ½ dl vegetable broth
  • 4 tbsp vinegar (raspberry vinegar)
  • 4 tbsp balsamic vinegar
  • 1 pinch(s) of sugar
  • 6 tbsp olive oil
  • Salt
  • Pepper, freshly ground
  • 2 cloves garlic
  • 2 sprigs rosemary

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Slowly caramelize the powdered sugar in a saucepan and deglaze with the port wine. Simmer over medium heat until a thick syrup has formed (about 0.5 dl left), then add the stock. Remove the pan from the heat, stir in both vinegars, sugar, and olive oil, and season with salt and pepper. Let the garlic and rosemary sprigs simmer in the vinaigrette for about 5 minutes, then discard.
