Ingredients for 4 servings:
- 1 kg leaf spinach, fresh
- salt and pepper
- 2 tbsp crème fraîche
- 750 g mushrooms
- 1 onion(s)
- 1 tbsp oil
- 75 g white bread
- 75 g Parmesan
- 4 tbsp butter
- nutmeg
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour
Wash the spinach, add it to a large pot while it’s still dripping wet, and let it wilt over medium heat. Drain off any excess liquid. Mix the spinach with pepper, salt, nutmeg, and crème fraîche, and set aside. Slice the mushrooms. Chop the onion and fry in oil in a large pan until translucent. Add the mushrooms and fry until well-seared, stirring vigorously. Season with salt and pepper. Finely chop the white bread and Parmesan in a blender. Layer the spinach and mushrooms in strips in a wide baking dish and sprinkle with the white breadcrumbs. Melt the butter and drizzle over the top. Bake in a preheated oven at 200°C for approximately 15-20 minutes.
