Great-grandmother's gluten-free chocolate cake

Ingredients for 1 servings:

  • 6 eggs
  • 200 g butter
  • 250 g sugar
  • 200 g almonds, ground
  • 200 g chocolate, dark
  • 1 ½ tsp cornstarch
  • 1 ½ tsp cherry brandy
  • 1 tsp baking powder
  • 1 pinch of salt
  • Grease for the mold, or baking paper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Separate the eggs. Beat the egg yolks, butter, and sugar until fluffy. Combine the almonds, cornstarch, and baking powder, pour into the egg mixture, and mix. Beat the egg whites until stiff peaks form, add a pinch of salt, and lightly mix into the mixture. Melt the chocolate and stir in the kirsch. Mix with the remaining mixture. Pour everything into a greased springform pan (line with baking paper if desired). Bake for 10 minutes at 180°C (fan oven), then reduce the heat to 130°C (fan oven) and bake for another 50 minutes.
