Ingredients for 12 servings:

  • 1 kg green beans (frozen)
  • salt and pepper
  • 100 g shallot(s)
  • 2 garlic cloves
  • ½ bunch parsley, chopped
  • 5 tbsp white wine vinegar
  • 100 ml olive oil
  • 1 handful of black olives, pitted
  • 100 g tomatoes, dried in oil
  • 125 g feta cheese

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Blanch the beans in boiling salted water for about 8 minutes. Then rinse and drain. Peel and finely dice the shallots and garlic. Chop the parsley. Mix the vinegar with a little salt and pepper. Whisk in the olive oil and taste, adding more oil if necessary. Add the shallots, garlic, and parsley and stir in. Slice the olives. Drain the tomatoes. Then quarter them and cut into small cubes. Crumble or dice the feta cheese. To serve, combine everything in a bowl and mix together, or arrange on a platter.
