Greek bean stew

Ingredients for 4 servings:

  • 1.2 kg beans, fresh, green
  • 1 large onion(s)
  • 1 bunch of flat-leaf parsley
  • 3 m.-large beefsteak tomatoes
  • 1 cup(s) olive oil
  • Salt
  • pepper
  • Water, as needed
  • possibly potatoes

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Remove the strings from the beans and leave them whole. Split only the larger ones in half. Then wash them under cold running water and place them in a larger pot. Slice the onion, peel the tomatoes, and grate them or chop them in a blender. Add the onions to the beans and bring to a boil with a cup of water. Shake the beans frequently, then add the chopped tomatoes and stir again. Now add the olive oil and parsley and cover with water. Season with salt to taste and simmer for one hour over medium heat, stirring frequently and adding a little water. Ten minutes before the end of the cooking time, add peeled potatoes, cut into quarters, and finish cooking. Season with pepper to taste. Serve with white bread or pita bread. This recipe is traditionally Greek and is eaten this way by the Greeks. If desired, you can add a little garlic.
