Ingredients for 4 servings:

  • 1 m.-large brown bread, slightly stale
  • 8 tomatoes, finely diced
  • 1 ½ onions, finely diced
  • ½ bunch parsley, finely chopped
  • 1 lemon(s), squeezed
  • 8 tbsp olive oil, good
  • Pepper, freshly ground
  • Oregano, dried
  • Salt

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Cut the slightly hardened brown bread into smaller cubes. Sprinkle with a little water (approx. 50 to 100 ml, or to taste; it shouldn’t be too wet), stir, and let stand for half an hour. In a bowl, mix the finely diced tomatoes and onions, as well as the finely chopped olives, with the bread cubes, lemon juice, a little salt, freshly ground pepper, and olive oil. Fold in the parsley. Sprinkle with the dried oregano and stir to combine. Let the bread salad stand for another one to two hours, season to taste, and serve.
