Ingredients for 1 servings:

  • 200 g feta cheese
  • 10 black olives, pitted
  • 50 g tomatoes, dried, pickled in oil
  • 50 ml oil (from the pickled tomatoes)
  • 1 tsp thyme, dried
  • 2 garlic cloves, pickled (or fresh)
  • 210 g flour
  • 40 g oat flakes
  • 1 packet of baking powder
  • ¼ tsp salt
  • 1 egg(s)
  • ¼ liter of milk
  • 1 tsp paprika powder
  • n. B. Pepper, freshly ground
  • possibly grease for the mold

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven to 180°C. Dice 150g of the feta cheese along with the tomatoes, olives, and garlic. In a bowl, combine the flour with the baking powder, oats, paprika, pepper, salt, and thyme. In a second bowl, whisk the egg with the milk and oil. Combine all ingredients and mix until the dry ingredients are just moistened. Grease a muffin tin or, better yet, use paper baking cups and place them in the muffin tin. Pour the batter into the cups and sprinkle with the remaining feta cheese. Place in the preheated oven and bake for about 20 minutes. Then remove from the oven, let cool briefly in the tin, and then transfer to a wire rack.
