Puff pastry parcels with feta

Ingredients for 1 servings:

  • 1 pkt. puff pastry (refrigerated, rolled up)
  • 150 g feta cheese
  • 2 egg yolks
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roll out the puff pastry and cut into round circles using a glass or cup. Mash the feta cheese with a fork. Crack one egg yolk and mix with the feta cheese. Add pepper to taste—salt isn’t necessary, as the cheese is already salty enough. Spoon a spoonful of the cheese filling onto the round puff pastry circles and fold them shut. Don’t use too much of the mixture, or it will leak out. Press the folded halves firmly around the edges with a fork. This will create a nice pattern. Crack the second egg yolk well and brush the puff pastry parcels with it. Place on a baking sheet lined with baking paper. Preheat the oven to 200°C and bake the parcels until golden brown. Perfect for a wine evening or buffet. This recipe is from my sister Sabine, who has lived in Greece for over 20 years. The higher the quality of the cheese, the better the puff pastry parcels.
