Ingredients for 4 servings:
- 2 large onions
- 2 garlic cloves
- 5 tbsp olive oil
- 50 g butter
- 4 fish fillets (sea bass fillets, 150 – 200 g each)
- salt and pepper
- 2 large tomatoes
- 1 lemon(s), grated peel

requires little work and is simple
Finely chop the onions and garlic and cook in the olive oil until translucent. Grease an ovenproof dish with butter and place the fish fillets next to each other. Season with salt and pepper. Now add the olive oil along with the onions and garlic. Peel the tomatoes, slice them and divide them between the fillets. Sprinkle the grated lemon zest over the fillets. Now place the remaining butter in flakes on top. Place the whole thing in the preheated oven on the middle rack at 200°C for approx. 25 minutes. This is the basic recipe, but you can of course adapt it to your taste – e.g. with feta cheese, herbs or other types of fish fillets, etc. Despite all the experimentation, I think it’s important that the Greek character is not lost. This goes perfectly with crusty, still warm bread or baguette.
