Ingredients for 4 servings:
- 800 g potatoes, cooked, including leftovers from the previous day
- 3 medium-sized onions, diced
- 1 tbsp tomato paste
- oregano
- salt and pepper
- Olive oil, for frying
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Tender potatoes
Peel the potatoes and dice them into small pieces. Dice the onions as well. Heat a pan and fry the potatoes. When they begin to turn golden brown, add the onions and fry until cooked through. Then add tomato paste, oregano, salt, and pepper, season to taste, and fry briefly. Serving tip: Serve the fried potatoes hot with diced feta or tzatziki. Serve with salad.
