Greek-inspired rice salad

Ingredients for 2 servings:

  • 100 g rice
  • 1 bell pepper(s), red
  • 3 spring onions
  • 100 g feta cheese
  • 65 g Greek yogurt
  • 3 cl lemon juice
  • some olive oil
  • some thyme
  • some rosemary
  • some garlic
  • e.g. salt and pepper
  • n. B. sugar
  • n. B. water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cook the rice according to the package instructions until al dente. Cut the bell pepper, spring onion, and feta into bite-sized pieces. For the dressing, combine the yogurt, spices (don’t be stingy with the herbs), and lemon juice. Then add water until the dressing is almost as runny as a regular vinaigrette. Drain the rice and add it to a bowl with the other ingredients. Mix in the dressing and finish with a drizzle of olive oil. If you like, you can also cook the rice in vegetable broth or with spices for flavor. Approx. 330 kcal per serving.
