Ingredients for 4 servings:
- 100 ml rice
- 150 ml water
- ½ tsp coarse salt
- 250 g minced pork
- 250 g minced lamb or beef
- 1 egg(s)
- 100 ml milk
- 1 tsp salt, coarse
- Pepper, freshly ground
- 2 tbsp parsley, freshly chopped
- ½ garlic clove(s), pressed
- 1 small onion(s), finely chopped
- 100 g feta cheese
- 20 g butter
- 400 ml yogurt
- ½ garlic clove(s), pressed
- ½ tsp salt, coarse
- Pepper, freshly ground
- 1 cucumber(s), peeled, pitted, cut into small cubes
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook rice in boiling salted water over low heat for 12 minutes. Then remove the pot from the heat and let stand for another 12 minutes. Mix the minced meat, egg, milk, salt, and pepper. Add the cooked, cooled rice. For the filling, mix the parsley, garlic, and onion, then crumble in the feta cheese. Grease a baking dish and layer the minced meat mixture and filling alternately to form a small loaf, starting and ending with the minced meat mixture. Bake in a preheated oven at 200°C for 60 minutes. For the cucumber salad, season the yogurt with garlic, salt, and pepper. Add the diced cucumber and mix everything thoroughly.
