Ingredients for 4 servings:
- 400 g pasta
- 3 tbsp olive oil
- 1 cucumber(s)
- 2 garlic cloves
- 1 onion(s)
- 2 bell peppers, yellow and green
- 1 tomato(s)
- 300 g sheep’s cheese
- 150 g black olives without stones
- 3 tbsp vinegar
- 5 tbsp olive oil
- salt and pepper
- oregano
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cook the pasta in plenty of salted water until al dente. Drain and toss with 3 tablespoons of olive oil to prevent sticking. Peel and chop the cucumber, mince the garlic cloves, finely dice the onion, trim and slice the bell peppers, dice the tomatoes, dice the feta cheese, and halve the olives, if desired. Combine everything with the pasta in a large bowl and mix well. For the dressing, whisk together the vinegar, oil, oregano, salt, and pepper. Pour over the pasta salad and toss everything well. Let the pasta salad sit for 2-3 hours before serving, then season to taste.
