Ingredients for 6 servings:
- 4 small zucchini
- 4 tbsp olive oil
- 1 pack of dill, frozen
- salt and pepper
- 2 tbsp oil
- 2 tbsp lemon juice
- 1 tbsp vinegar
- 1 large bell pepper(s)
- 2 small onions
- 250 g feta cheese
- 1 pack of parsley, frozen
- 1 head of lettuce
- Sugar
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Clean, wash, and slice the zucchini. Heat olive oil, fry the zucchini slices until translucent and lightly browned, and sprinkle with dill. Place the zucchini and its cooking liquid in a bowl and mix with the oil, lemon juice, vinegar, pepper, salt, and sugar. Slice the tomatoes, wash the bell peppers, and slice them into strips. Slice the onions. Combine the tomatoes, bell peppers, and onions with the zucchini. Add the crumbled feta cheese and parsley, mix well, and let it marinate in the refrigerator for about an hour. Before serving, stir in the washed, torn lettuce leaves.
