Greek farmer's salad à la Gabi

Ingredients for 4 servings:

  • 1 large onion(s), finely diced
  • ½ cucumber(s), unpeeled, halved lengthwise, sliced
  • 1 large zucchini, unpeeled, halved lengthwise, sliced
  • 400 g cocktail tomatoes, halved
  • 2 bell peppers, red and yellow, cut into thin strips
  • 4 peppers, green, mild, cut into rings
  • 10 olives (or more), black, pitted, thinly sliced
  • 400 g feta cheese, diced
  • 3 tsp white wine vinegar
  • 2 tbsp olive oil
  • 3 tsp mustard, medium hot
  • 1 tsp thyme, dried
  • ½ tsp rosemary, dried
  • Salt and pepper, black, from the mill

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour

Combine the onion, cucumber, zucchini, cherry tomatoes, bell peppers, chili peppers, olives, and feta cheese in a salad bowl and mix. Whisk together the vinegar, oil, and mustard and season with thyme, rosemary, salt, and pepper. Pour the dressing over the salad, fold in, and let it stand for about 30 minutes.
