Ingredients for 6 servings:

  • 500 g pasta (kritharaki)
  • 1 zucchini
  • 1 cucumber(s)
  • 1 jar olives, black
  • 5 tomatoes
  • 1 bunch arugula
  • 1 shot of water
  • 1 clove(s) garlic
  • 1 pack of feta cheese
  • Vinegar
  • olive oil
  • marjoram
  • Sugar
  • salt and pepper
  • Paprika powder
  • Thyme

Kritharaki pasta salad

First, cook the pasta, drain, and let cool. Meanwhile, chop the zucchini and fry in a pan with a little olive oil. Cut the cucumber and tomatoes into small pieces. Slice the olives and wash the arugula, removing the stalks and cutting it in half. Mix all the ingredients in a large bowl. To make the dressing, first press the garlic clove. In a bowl, mix together a little water with the vinegar, the garlic, salt, pepper, sugar, and olive oil to taste. Pour the dressing over the pasta and vegetable mixture and mix well. Season to taste with marjoram, thyme, salt, pepper, and paprika. Finely crumble the feta cheese over the salad and mix everything well. Let the salad marinate for a while and then fold in the arugula.
