Greek spinach rice

Ingredients for 4 servings:

  • 1 kg fresh leaf spinach, cleaned and washed
  • 200 g spring onion(s), cleaned, washed and sliced
  • 1 bunch dill, washed and chopped
  • 150 g rice (long grain), washed
  • 5 tbsp olive oil
  • 1 lemon(s), untreated, washed and quartered
  • some salt
  • some black pepper, ground

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Spanakorizo

In a large pan, glaze the onions in olive oil, add the spinach, and simmer for 3-4 minutes. Add the rice and 600 ml water, bring to a boil, add the dill, season with salt and pepper, and simmer covered for 20 minutes. Stir occasionally and add a little water if it gets too dry. Season with salt and pepper and serve with the lemon quarters.
