Ingredients for 4 servings:
- ½ kg lentils
- 1 onion(s), chopped
- ¾ cup olive oil
- 2 garlic cloves, chopped
- 1 tbsp tomato puree
- 3 bay leaves
- 3 tbsp vinegar
- salt and pepper

vegetarian and simple
Boil the lentils in water for 5-6 minutes, then drain and discard the water. Sauté the onions in olive oil until translucent. Add the lentils, garlic, the tomato puree diluted with 1 cup of water, bay leaves, salt, and pepper. Cover well with water and simmer for about 1/2 hour. When the lentils are tender, season with vinegar and simmer for another 5 minutes, then serve.
