Green asparagus in sesame seeds with green Tabasco mayonnaise

Ingredients for 4 servings:

  • 600 g asparagus, green
  • 100 g flour
  • 2 eggs
  • 75 ml water
  • 1 cup breadcrumbs, from old rolls
  • ½ cup sesame seeds, black and white
  • 1 cup homemade mayonnaise
  • 10 dashes of Tabasco, green
  • 2 chili peppers, without seeds, chopped
  • vegetable oil
  • Salt
  • black pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Break off the tough ends of the asparagus. Dust the asparagus with flour and toss in the egg and water mixture. Mix the breadcrumbs with the sesame seeds and roll the asparagus in them. Do not bread the asparagus heads. Mix the mayonnaise with the Tabasco and chili peppers. Heat the oil in a pan and cook the asparagus in batches for about 3 minutes until golden and crispy. The asparagus should be half submerged in the oil. Then place it on a kitchen towel to absorb the fat. Season with salt and pepper and serve cold or warm with the Tabasco mayonnaise.
