Green asparagus quiche

Ingredients for 4 servings:

  • 70 g flour
  • 70 g butter
  • 70 g quark (low-fat quark)
  • 500 g asparagus, green
  • 1 bunch of mixed herbs
  • 200 g sour cream
  • 4 tbsp sweet cream
  • 2 eggs
  • 70 g smoked ham
  • 3 tbsp breadcrumbs, preferably homemade
  • Salt
  • pepper
  • Butter, in flakes

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Knead the flour, butter, and curd cheese into a dough and let it rest in the refrigerator for at least half an hour. Meanwhile, peel the asparagus at the bottom, cut into pieces, and blanch in heavily salted water for 2-3 minutes, then rinse and drain. Cut the smoked ham into very thin strips and finely chop the herbs. Preheat the oven to 200°C (top and bottom heat 180°C fan-assisted). Roll out the dough on a floured surface and line a 26-28 cm tart tin. Spread the breadcrumbs on the bottom, top with the ham and half of the herbs. Arrange the asparagus nicely on top. Purée the remaining herbs with the eggs in a food processor, blender, or with a hand blender, stir in the cream, and season to taste. Pour over the asparagus and sprinkle with the butter flakes. Bake for 35-40 minutes. Let rest for a while before serving, then cut into four pieces. Serve with a green salad or tomato salad. It tastes good hot, lukewarm, or cold. Of course, you can also use your favorite herbs, mixed or plain.
