Asparagus white bread cake

Ingredients for 4 servings:

  • 375 g asparagus, white, cooked
  • 375 g asparagus, green, cooked
  • 250 g white bread
  • 100 g butter, melted
  • 150 g ham, raw, cut into strips
  • 4 eggs
  • 100 ml milk
  • 125 ml cream
  • salt and pepper
  • 2 tbsp Parmesan, grated
  • Nutmeg, freshly grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 200°C. Cut the white bread (remove the crusts if necessary) into 3 cm thick, long slices. Line a 26 cm springform pan tightly with the bread slices and drizzle with butter. Arrange the asparagus spears on the bread slices in a star shape (with the tips facing outwards). Sprinkle the ham strips over the asparagus. Whisk the eggs with the milk, cream, and seasonings, then stir in the Parmesan cheese. Pour the egg mixture over the asparagus. Place the pan in the oven and bake for about 20 minutes. You could serve it with hollandaise sauce, but this isn’t absolutely necessary, as the asparagus tart is very moist.
